The organic Farms suppliyng paddy rice to WBT are 82; groupped in regional Associations, each one of them must meet the following requirements:

• each farm must cover more than 50 ha
  


• all cultivations must undergo crop rotation
  


• spring water must satisfy the farm's need
  


• each farm must be notify to the Italian Minister of Agriculture, registered in the list of Organic Certifiyng body Control recognised by IFOAM (International Federation of Organic Agriculture Movements) and produce in conformity to the EEC reg. 2092/91
  


• the paddy rice must be dried using indirect heat
  


• after the harvest the paddy rice is analised by WBT to ensure the absence of chemical residues
  


• each farm is subject to 2/3 unannaunced visits by the Organic Certifiyng Body.
